15 ml golden syrup
1 cup (130 g) Sultanas
30g butter, diced
1 cup (250 ml) boiling water
2 cups (260 g) white pastry flour
1 egg, well beaten
1 cup (205 g) sugar
1 tsp baking powder, 1 tsp baking soda, pinch of salt
1 tsp vanilla essence, 1 tsp cinnamon powder
How to Prepare a Sultana Loaf
Prep Time: 20 min | Cook Time: 1 hour | Total Time: 1 hr, 20 min | Servings: 12 slices
This delicious Sultana Loaf consists of pantry basics. It is a dessert bread that tastes excellent when served with tea of coffee.
INSTRUCTIONS:
Preheat oven to 180C (355F). Line a loaf tin with baking paper and set aside.
Add Sultanas into a medium sauce pan. Mix in boiling water, butter, and baking soda. Bring to boil, and cook for 3-5 min, while stirring occasionally.
Pour Sultana mixture into a medium bowl, and allow to cool for about 7-10 min. Then add flour, sugar, baking powder, salt and cinnamon. Mix until combined well.
Add egg, vanilla and syrup (optional). Stir to combine.
Pour mixture into loaf tin and bake for 1 hour. With a toothpick, check if loaf is fully baked. Toothpick should come out dry.
Once ready allow to cool for at least 20 mins.
Store in an airtight container for up to four days.
