- Greek Yogurt/Kefir/Cream Cheese: As there are no artificial thickeners and it is cultured at lower temperatures, the finished yogurt & kefir will not be as thick as factory yogurt. For a little thicker you can culture longer (e.g. 10.5 to 12 hours) and avoid shaking, mixing, or blending as that breaks up the protein which will not thicken again. To really thicken it a lot, strain off the whey to make authentic Greek yogurt or strain it even more to make fresh kefir/cream cheese.
- Milk Alternatives: Also use milk alternatives with NATURAL SUGARS (check the nutrition label to make sure there are sugars/carbs for the probiotics to grow) and NO HARSH PRESERVATIVES (vitamin C or E, ascorbic acid… anything “to protect flavor" or “to preserve freshness" can kill probiotics - Please see milk alternatives page for brands that have worked-even many with some preservatives). As the probiotics grow it will turn from sweet to tart/acidic. At that point versions with a lot of protein can also thicken somewhat. Remember the probiotics can’t thicken proteins that aren’t there so most milk alternatives WILL NOT THICKEN as they have little to no protein. A favorite is 10 gram Almond & Cashew (that has a lot of pea protein).

The maker will warm up and then shut off automatically after the sensor reaches target temperature. As the milk circulates the warmth and the sensor cools down, then the maker will turn back on again to gently warm the milk (so the milk will never get too hot or hot to the touch). After the milk thickens and stops circulating the maker will turn on less and less frequently as the sensor is still at the target temperature (so the top of the bottle will start cooling and not feel as warm to the touch towards the end of a batch). So don't worry if your maker doesn't feel warm. It is working perfectly as long as a cool maker warms when first plugged in (it will heat up and then shut off after a moment as the sensor reaches target temperature).
